The crave-able Thanksgiving letfover dish I think about ALL YEAR...
Make way for our little family secret!
This one dish is what I look forward to for months - more than the actual Thanksgiving dinner! Husband made it up a couple of years ago, in a flash of inspiration — an “everything in the fridge” quesadilla the day after Thanksgiving — with mole — and it became an obsession...
It goes like this: a turkey, a sweet potato, and a pomegranate walk into a cheesy bar… 🎤
Jokes aside, this dish, I promise, will blow your socks off. It uses your leftover turkey bits and pieces. Sweet potato leftovers, chopped up - purple, orange, white, yams are fair game. Pomegranates give it a crunch. Gooey mozzarella or queso oaxaca take it to heavenly dimensions. Yes you can add any other veggie. Zazz it up with zhoug sauce and pomegranate seeds. Dip it in mole.
This dish is one I crave all year long… A family all-time favorite!
About that zazz, (not that it needs any zazzing): I like it with a side zhoug sauce, which is a jalapeno, cilantro, garlic, cardamon, and cumin sauce - super easy to make.
Optional but highly recommended:
If it is an option at all, get some fresh tortillas from a local tortilla maker.
Dip it with Mole sauce! This is my favorite.
Go crazy and ADD zhoug INSIDE it
